1 15 oz can of salmon 1 egg 1 heaping teaspoon of baking powder 1/2 c flour 1/4 c finely chopped onion.(i use a little more) black pepper
dump the salmon in to a bowl, reserving the juice in a measuring cup. add egg and mix with a fork. add flour then stir in the onion and pepper. take 1/4c of the juice (about what is in the measuring cup) and add the baking pwder. beat till foamy and it goes up to 3/4 cup. mix well into the fish. drop by teaspoons into hop oil and fry till golden.

this recipe comes from her years ago and I got it when we did a famly favorite recipe cookbook. its easy and pretty fast.

Thanks! My mother-in-law used to make these and my husband has mentioned them a few times. You know, the loving way, only a son can mention something his mother used to do for him.
His mother passed away in 1996 and when I make one casserole dish she used to make...he likes that.
I am sure he would love this.....do you serve it with white rice or wild rice or just a veggie? My mom makes these tuna pattie things with white rice and cream of mushroom soup as a gravy......its awesome.
