Givaudan, one of the world's largest flavor companies, has introduced its first annual flavor forecast, FlavorVision(TM). The forecast predicts top flavors and flavor trends for the upcoming year. Utilizing several sources, including Givaudan's own teams of marketing and consumer researchers; flavorists; its Chefs Council(R), a team of "the world's top chefs"; and TasteTrek(R), a program in which Givaudan's scientists and flavorists traverse the globe in search of exotic and undiscovered new flavors, Givaudan has amassed what it says may be the ultimate predictions in the world of taste.

Secondary sources, such as publications, restaurant menus and various databases were also consulted and analyzed.

The program showcases, the company says, Givaudan's ability to explore and understand global megatrends, cultural influences, and food and beverage trends that shape the way we think, what we consume, and ultimately, the future of flavor.

Following are the FlavorVision(TM) 2007 flavor predictions:

Wonderlands

Wonderlands is marked by consumer exploration and the desire for new experiences. From 360-degree stimulation through the ethnic and exotic, Wonderlands tests the limits and challenges the norms with the unconventional and unexpected.

Flavor Direction: Ethnic; Exotic; Experiential flavors ... tingle, cool, pucker, heat; and flavors with intense look, aroma, and taste.

Flavor Examples: Guava, Mangosteen, Pink Peppercorn, Smoked Paprika, Acai Berry, Blue Ginger/Galangal, Amazonian Herbs, Rooibos/Red Tea, and Rhubarb

Pleasure Principals

Indulgence spanning from simple to luxurious feeds the emotional experience and defines personal pleasure.

Flavor Direction: Sophisticated, adult tastes; Sweet, creamy, frothy textural flavors; flavors with provenance; and rich, sticky sweet browns.

Flavors: Caramel; Coffee; Custard; Tapioca; Pandan; Toffee; Vintage Spirits (Wine, Champagne); Buttercream; Bitter Chocolate and Artisanal Honey.

Body & Soul

Physical and emotional health and wellness. Consumers are looking for a total sense of wellness -- mind, body, appearance, and vitality -- through their environment, lifestyle, and the products they consume.

Flavor Direction: Active hydration flavors from foods with high water content; antioxidant berries and fruits; light, fragrant herbs; energizing foods and flavors; warm, calming spices and florals; natural healthy flavors from nutrition dense foods

Flavors: Miso, Watermelon, Pomegranate, Lavender, Green & White Tea, Almond, Pear, Bergamot, Cardamom, and Olive.

According to a major seasoning/flavor manufacturer, the top 10 flavor pairings of 2007 are:

1. Clove and Green Apple
2. Thyme and Tangerine
3. Tellicherry Black Pepper and Berry
4. Sea Salt and Smoked Tea
5. Lavender and Honey
6. Crystallized Ginger and Salted Pistachio
7. Cumin and Apricot
8. Toasted Mustard and Fennel Seeds
9. Wasabi and Maple
10. Caramelized Garlic and Riesling Vinegar


All of them sound pretty good, to me anyway. Especially the wasabi and maple.

No, apricots in 2007 will taste different, lol. Of course things still taste the same, the above is a list of combinations that they feel will be popular this year or which they will try to make popular in their product offerings. The list is from McCormick, they work with powerhouse and/or "star" chefs who do wield a great deal of influence, and as the consumer becomes more exposed to non-mainstream foods and ingredients the taste spectrum and level of expectation in cuisine broadens. Food and cooking are entertainment now, hence the popularity of the Food Network and food-related shows, and McCormick is capitalizing on that level of interest. Students are entering culinary schools hoping not just to be chefs, but to be star chefs.



McCormick teamed up with some of the nation’s hottest chefs, television cooking personalities and cookbook authors to create our top 10 list of flavors for 2007. These trendy, tantalizing and downright tempting flavor pairings will be influencing the foods we eat this year and in the future "In creating this report, we examined two overarching trends influencing flavor," said Laurie Harrsen, director of consumer communications at McCormick. "The first is the ever-expanding breadth of choices, specifically within individual ingredients. Even staples like salt are now available in a diverse palette of flavor, color and texture. Also, global cuisines, particularly those of North Africa, Asia and the Middle East, continue to drive our exploration of new foods and flavors."

I need to find a recipe to make some Mango Chutney. I love chutney... and I really love Mango Chutney.

So, if ANYONE could help me to find a recipe for either one I would reaaaaallllly appreciate it.
