Ruby fruit compote


I made a variation of this last week. It was very good. I made mine differently which my changes are going to be listed at the bottom.
1-20oz can frozen pitted cheries
1/3 cup sugar
1-tablespoon cornstarch
1-pinch of salt
1-teaspoon lemon juice
1-cup of fresh strawberries (hulled)
sour cream
Drain cherries, saving syrup. Add water to syrup to make 11/4 cups.
Blend sugar cornstarch and salt in saucepan; add reserved syrup. Cook stirring until thick and bubbly. Stir in fruit and lemon juice. Chill thoroughly.
Spoon into dessert glasses, add a dollop of sour cream
My Changes:
I used blueberries and banana slices as well. I also used whipped cream instead of sour cream. I also put this mixture in those little store bought angelfood cakes. It was so good.

That does sound pretty good ....

I will have to remember this one when I am at home again ... and try it ... 

I like the idea of using whip cream instead of sour cream ...
