We lost an old favorite from my grandmother when she passed away.  She never wrote down the recipe, and she never measured. 


She used to make this awesome Tomato cake!  It was a little like a spice cake, but darker and richer!  Anyone ever hear of a recipe for it?

Here's one that I found, try this one and see if it's close.


FRESH TOMATO CAKE


1 c Dark brown sugar
1/2 c Shortening
2 Eggs
3 c Flour
2 ts Baking powder
1 ts Baking soda
1 ts Nutmeg
1 ts Salt
2 c Fresh ripe tomatoes; peeled,
1/2 c Chopped nuts
1/2 c Chopped dates
1/2 c Chopped raisins

Sift dry ingredients together, set aside. Cream sugar and shortening. Add eggs, one at a time, beating after each addition. Add sifted dry ingredients, mixing well. Stir in tomatoes, nuts, dates, and raisins. Put into greased and floured 9x inch baking pan. Bake in preheated 350'F oven for 35 minutes or until cake tests done. Frost with cream cheese frosting.

Thanks buttercup! 


It looks like it will be close to grandma's recipe, she never put dates in hers but all of the other ingredients sound right!  I will have to give it a try in the next day or two!  I'll let you know!

I tried the recipe!  It was a tiny bit different from Grandma's but really close!  It was very much like carrot cake, very dense and moist!  Yummy!

HA, I didn't know you were on, I just sent you a PM, to make sure you didn't miss my thankyou!


I will be tweaking it a bit, this is the closest recipe I have found yet!  It won't take much!
