Styx, this is for you, it's not a completely original recipe of mine, but it's easy and it's good:
4 lbs chicken parts 2TBS vegetable oi 1 cup chopped onion 1/2 cup chopped bell pepper 2 cups rice (uncooked) 1 cup unthawed frozen peas or broccoli florets 1 TBS minced garlic 1 TBS paprika 1 tsp salt 1/2 tsp black pepper 3 cups chicken broth (or hot water and chicken bouillon) 1/2 tsp basil
1. Heat oil over medium-hight heat, add chicken pieces and brown on all sides, remove chicken from pan and set aside.
2. Drain all but approx. 3 TBS of the fat from the pan, reduce heat to medium-low and add onions and bell pepper.
3. Cook, stirring occasionally, until onions and peppers are tender.
4. Add rice, stirring until the garins are coated wit fat. Add garlic, paprika, salt, and pepper, cook for 1 minute.
5. Add chicken stock and basil, increase heat to high and bring to a boil. Scrape the bottom of the pan to loosen the browned bits.
6. Place the chicken pieces in the rice and pour in any accumulated chicken juices. Cover pan tightly and simmer over medium-low heat for 20 minutes.
7. Stir in peas or broccoli, cover and cook additional 10 minutes or until rice is tender.
If you don't want to add the peas or broccoli, just skip the last step and increase the cooking time by 10 minutes.

Personally, I would omit the spleen. The adrenal glands should make a nice gravy, though. You can fry and then finely dice the vulva to sprinkle over the top as a savory garnish.
Sorry, I use the words "assorted parts" a lot when I write recipes at work and I got carried away. Breasts, legs, thighs, and wings will do.
I usually buy a package that contains a whole chicken, cut up.
