Apple Crisp




  • 5 apples

  • 1 t lemon juice

  • 1 t grated lemon rind

  • 1/4 t salt

  • 1 t cinnamon

  • 1/2 c sugar

Wash, pare, core & slice apples into a bowl. Add lemon juice, rind, cinnamon, sugar. Blend until well-coated. Put into a 6 cup shallow baking dish, buttered. Cover with crumb topping.


Topping



  • 1/2 c sugar

  • 1/2 c sifted flour

  • 1/2 c butter

  • 1/2 c chopped nuts

Crumble together and pack over apples. Bake at 350, for 45 min. Serve with cream, whipped cream or ice cream. Serves 8.

Today was the local apple festival; I came home with a ton.  Then I had to look at my recipes to see what I was going to make.

You're funny.  Apple BUTTER yes, applesauce, no.  Not when there is cake, pie, and yes apple squares, oh and lets not forget baked apples or apple muffins.  And I'm fixing to go in the kitchen & cook up a mess of apple rings.  I might even try ninjamom's pepper suggestion.

my apple cake


Apple cake



 



 



 



 



1 cup sugar



1/2 cup shortening (I use butter)



2 eggs



1 1/2 cups all purpose flour



2 teaspoons baking powder



pinch of salt



1/2 cup milk (or a few drops more)



4 medium apples, peeled and sliced



2 tablespoons sugar and 1 teaspoon cinnamon, mixed together (I use probably 1/2 cup sugar and 1 tablespoon cinnamon)



I also sometimes put walnuts on top of the apples, and under the cinnamon sugar.



 



cream butter and sugar, add eggs



add sifted (I just wisk them in a bowl) dry ingredients alternately with the milk.



 



arrange apple slices on top and sprinkle with the cinnamon sugar.



 



bake at 350 for about 25 minutes in a 9 x 13 pan.



 



 



apple cake is best served warm with sweetened whipped cream with almond and vanilla added to it.



 



I also put about a teaspoon or so of vanilla in my apple cake.


I already did this in a thread, so i just reposted it.
