2 cloves garlic, minced 1 mild jalapeno pepper, seeded and minced 4-6 tomatoes, diced (roughly 2-3 cups) 1 medium onion, diced 1/2 green bell pepper, minced 2 TBS chopped cilantro Juice of one lime 1/2 tsp salt
Combine all ingredients and let stand overnight to allow the flavors to bloom. If you prefer, you can put all of the ingredients except the cilantro into a food processor and pulse it a few times until it's the consistency that you want. Then add the cilantro.

This recipe was excellant. The first batch I made I used too many tomatoes so I started over again. The seconed time I pulsed everything except the tomatoes and just added those a little bit at a time. This was the best tasting stuff I have had in awhile. Thanks BC
