1/2 cup butter or margarine 1/2 cup plus 3 TBS flour 4 cups pan drippings (add chicken broth to pan drippings to equal 4 cups)
1. Drain the pan drippings from the roasted turkey through a fine strainer. 2. Let sit or refrigerate for a few minutes and then remove any fat from the top of the drippings. 3. Add in chicken broth to make 4 cups if necessary. 4. Melt butter in medium saucepan. 5. Add in 1/2 cup flour plus 3 tablespoons; constantly whisk for about 3 minutes. 6. Slowly add in the 4 cups turkey broth/drippings; whisk constantly over medium-low heat until thickened (about 3-4 minutes). 7. Simmer over low heat another 3-4 minutes adding in salt and black pepper if needed.

8 redskin potatoes, roughly peeled and chopped 1/2 tsp salt 3 TBS butter half & half or milk
1. Add potatoes and salt to enough water to cover the potatoes, bring to boil and maintain boiling for 20 - 25 minutes or until potatoes are tender. 2. Drain potatoes, transfer to a mixing bowl and beat with an electric mixer on low speed until no lumps remain. 3. Add butter, beat until blended in. 4. Slowly add milk or half & half, 1-2 TBS at a time, beating after each addition until potatoes are light and fluffy. Add salt and pepper to taste.
**You can add a bruised garlic clove and 1 tsp chopped rosemary to the cooking water if you like.
